Lamb mince, also known as ground lamb, is a flavorful and versatile meat that can be used in a variety of recipes, from classic shepherd's pie to spicy kebabs. Here's a recipe for lamb kofta:

Ingredients:

  • 1 pound lamb mince
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • Salt and pepper, to taste
  • Olive oil, for cooking

Instructions:

  1. Preheat the oven to 375°F.
  2. In a large bowl, mix together the lamb mince, onion, garlic, parsley, mint, cumin, coriander, cinnamon, allspice, salt, and pepper until well combined.
  3. Form the mixture into small meatballs or oblong shapes.
  4. Heat a large skillet over medium-high heat and add a drizzle of olive oil.
  5. Once the oil is hot, add the lamb kofta to the skillet and cook for 2-3 minutes on each side, until nicely browned.
  6. Once the lamb kofta are browned, transfer them to a baking sheet.
  7. Bake the lamb kofta in the preheated oven for 10-15 minutes, until cooked through and the internal temperature reaches 160°F.
  8. Remove the lamb kofta from the oven and let them rest for a few minutes before serving.

Lamb mince has a rich, slightly gamey flavor that pairs well with a variety of spices and herbs. It's often used in Middle Eastern and Mediterranean cuisine, such as lamb meatballs or stuffed grape leaves. Enjoy!
