Whole medium-sized artichokes (48-52 pcs.), carefully selected and without stems, processed with oil and flavoured with vinegar.The artichoke are cleaned, and the hearts are placed in containers in the refrigerator for 2-3 days to start the oxidation process that gives them the “rustic” look.
